Colorful Kimchi Fried Rice

INGREDIENTS

Fried Rice

  • 1 1/2 tablespoons sesame oil ( or oil of choice)
  • 2 cups diced yellow onions roughly 1 large onion
  • 4 cloves garlic, minced
  • 2 tablespoon minced ginger
  • 1 1/2 cups kimchi( store bought or homemade) roughly chopped
  • 5 cups cooked jasmine white rice ( or rice of choice, long grain preferred for this recipe)
  • 2 carrots, shredded
  • 2 tablespoons Tamari or Coconut aminos
  • 2 tablespoon Sriracha or chili garlic sauce( omit for less spice)
  • 1 teaspoon peanut oil or more sesame oil
  • 2 scallions, sliced

Fried Eggs

  • 1-2 tablespoon avocado or olive oil, add more if necessary
  • 4 large eggs

INSTRUCTIONS

  1. In a 10- or 12-inch Xtrema skillet heat 1 1/2 tablespoons of sesame oil over low heat. Remember since cooking with fully pure ceramic heat pan for a full 5 minutes and then add your oil.

 

  1. Toss the onions and cook until they start to turn translucent and soft, about 5 minutes. Add the garlic and ginger to the skillet and cook for 1 minute or until they start to become nice and fragrant, make sure to stir constantly so they don’t burn and stick to the bottom of the pan. Add the chopped kimchi and stir together until everything is evenly combined and heated through.

 

  1. Add in your cooked rice and carrots to the skillet and stir to combine everything together. Add the tamari (or coconut aminos), chili sauce/sriracha (if desired) and peanut or sesame oil. Mix until all the rice has been well coated with all the sauces, taste the rice, and adjust to your liking. You can always at 1 tsp of a time of tamari if you need a touch more of salty flavor to come out. Top your rice with sliced scallions and remove rice from heat.

 

  1. Time to fry the eggs! Our 7-inch skillet is our top choice for fried eggs!  Feel free to use any of our Xtrema skillets to fry your eggs up though, they all work great ! * Pro tip: Make sure to evenly heat your pan up on low for no sticking.  For best results use a high-quality oil spray to prevent further sticking.  I used an organic avocado oil that works beautifully. Place 7 inch or desired skillet on the stove and place heat on low and set timer for 5 full minutes.  Once the 5 minutes is complete, spray generously with oil spray.  Next, crack eggs directly in the pan and cover with lid to steam ( this will give you the perfect fried or over easy egg).  Leave covered for 1 to 2 minutes. After two minutes flip your eggs and cover for another 1 to 2 minutes.  At this point you will have an over easy egg, if desired for a true fried egg, press into skillet and keep cooking until desired. Repeat this step with all eggs and serve rice with eggs for a delicious and health promoting  meal!
