Roasted Veggie Salad

Ingredients

  • 3 Small Beets

  • 2 Carrots

  • 1/2 Shallot, minced

  • 1 Garlic clove, minced

  • 1 tablespoon extra-virgin Olive Oil

  • 2 tablespoons Balsamic Vinegar

  • 1 tablespoon Dijon Mustard

  • 1 tablespoon Maple Syrup

  • salt and pepper to taste

  • 1/4 cup crumbled feta cheese

  • 1/4 cup walnuts (options)

  • 6-8 cups greens (we love spring mix, but you can use spinach, kale, etc.)

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C).

  2. Peel and chop beets and carrots into bite-sized pieces

  3. Toss with salt, pepper and olive oil and roast in the oven for 40 minutes until tender

  4. While the beets are roasting, whisk the shallots, garlic, olive oil, balsamic vinegar, mustard, and maple syrup in a bowl until blended; season with salt and pepper, and set aside.

  5. Toss greens with the roasted veggies, dressing, and nuts if using.

  6. Top with feta and enjoy!

  7. Feel free to add any other add-ins to your liking! We love cucumber, peppers, etc.
