Holidays are a great time to spend with family and celebrate traditions. In our home, we’ve always baked. Whether cookies for Christmas, pies for Thanksgiving, or other dishes for bringing to friends’ and families’ homes for holiday meals, baking and cooking is a family tradition we’ve carried on with our own children.
When you bake and cook, people tend to develop specialties and favorite dishes that get requested time and again. I apparently make a fantastic pie and homemade macaroni and cheese. Pie — apple or blueberry depending on the season — and my mac and cheese are the things most requested by both my family and as dishes to bring when we’re invited to dinner or parties.
When I don’t have time to make a crust from scratch and don’t have a pre-made crust kicking in the fridge, I opt for a cobbler instead of a pie. It’s easy, tasty, and if I’m being honest, it’s also fewer calories.
There are a few benefits to making an Apple Cobbler in a skillet. The main benefit is that it is easier than baking a pie and doesn’t require fussing with a crust. The skillet will also keep the cobbler warm longer than a traditional glass pie plate will. This can also be adjusted for special diets, especially useful when hosting several guests for dinner over the holidays. For example, use stevia brown and regular sugar (keto, low carb or diabetic diets), almond or coconut milk instead of dairy milk (non-dairy, lactose free or vegan) and eliminate/swap out the honey (vegan). The recipe already uses coconut flour (gluten-free and low-carb, keto and diabetic diets). Do all of the above to accommodate most special diets!
EASY SKILLET APPLE COBBLER
- 1/4 cup butter
- 5 or 6 large apples, peeled, cored, quartered, and thinly sliced (Granny Smith apples are our preferred apple of choice)
- 1/2 cup brown sugar
- 1/2 cup sugar + 2 tbsp. sugar
- 1/2 cup honey
- 2 1/2 cup coconut flour
- 1/4 tsps. baking powder
- 2 cup skim milk
- 4 tsps. ground cinnamon
- Pre-heat oven to 350 degrees Fahrenheit.
- On the stovetop in a ceramic skillet, melt butter.
- In a large mixing bowl, mix flour, baking powder, milk, 1/2 cup sugar, brown sugar, and honey.
- Pour the batter into the ceramic skillet with the melted butter. Layer the apples on top. Do not stir.
- Mix the remaining 2 tbsp. sugar and cinnamon in a bowl and sprinkle on top of cobbler.
- Bake at 350 degrees for approximately 45 minutes or until golden brown on top. The crust rises to the top and edges as the cobbler bakes.
- Cool. Serve. Enjoy. This dish is excellent served with some vanilla frozen yogurt.
