Strawberry Spinach Salad with Feta


We used the Xtrema 4-quart Baking dish but you could also serve this in any of our skillets or bakeware items depending on the size you may need.



  • ¼ cup raw Pistachios or Pecans
  • 1/2 small red onion very thinly sliced
  • 10-12 ounces fresh baby spinach ( could also sub half arugula!)
  • 1-quart strawberries sliced to your liking
  • ½ cup crumbled feta goat cheese about half a block turned into crumbles

Balsamic Dressing:

  • 1/4 cup balsamic vinegar
  • 3 tablespoons extra-virgin olive oil
  • 1 1/2 tablespoons poppy seeds
  • 1 1/2 tablespoons honey
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon black pepper
